Yield calculator
Turn an as-purchased case weight into usable weight after trim, and see what that product really costs per usable pound. Tap the question mark beside a field if you are not sure which number to use.
Enter the as-purchased weight, then either the usable weight after trim or a known yield percent.
Yield is usable weight divided by as-purchased weight. Cost per usable pound is what you paid divided by the usable weight. A 20 lb case of romaine that trims down to 14 lb is a 70% yield; if that case cost $18, the usable pound costs $1.29. Comparing restaurant vendor prices walks through yield with a tenderloin example.
Proteus Kitchen keeps inventory, vendors, and purchase orders in one place. It does not calculate yield or cost per usable pound, so that work still starts from a weigh-before and weigh-after test in your kitchen.
